OUR COCONUT AND PEANUT MATOKE

I love matoke. There's just something about it that hits different. Especially when mom makes it. I just felt giddy thinking about it lol. Green bananas are one of the things that get sent from the shamba. And you know me, when its in abundance ,you get creative. I mean I have experimented with every flavour combination under the sun and all the discoveries have been amazing.

One of the main reasons I love working with matoke is its blandness. Its like a sponge that sucks up any flavor you give it. Hence, its important to find flavours that work. We did just that with coconut and peanut butter. I feel like I this is an underrated pairing because these two, delicious. Coconut milk and peanut butter both have nutty flavours hence marry well together. Where peanut butter can be intense if used on its own, coconut milk mellows it down.

This dish is not only delicious, its healthy. Its 100% vegan and can be a good choice for those days of the week you want to go meatless. Being plant based makes its so good for our health without losing taste. Hope you try incorpating more plant meals in the next week😊


Tips: when you peel matoke, rub oil on your hands to avoid black stains. Also to avoid black exterior on matoke, after peeling place then in water until cooking time.


You'll need:

10-12 matoke peeled and cut into 3

1 tbsp cooking oil

1 onion diced

1 tbsp peanut butter

1/2 cup coconut milk

1 tsp salt

1 tbsp grated ginger

1 tsp turmeric powder

1 whole pepper ( optional)

1 cup cooked peas

1 diced zucchini

1 diced carrot

1 green bell pepper

1 coriander bunch

1tsp curry powder

2 royco cubes




In a sufuria, add oil. When hot, add in onion and stir until brown.



Add in coriander stems, ginger and pepper



Add the spices and stir

Add the carrots, zucchini and peas and stir. Also add tomato paste.



Once steamed, add in the peanut butter and stir until dissolved



Add the coconut milk and water little by little until desired consistency. Bring to a boil.



Once its boiled, add the matoke. Stir and let it simmer for 10 minutes.



Use a fork to see if the matoke are cooked through. Add the bell pepper, stir.



Remove from heat, add the coriander leaves.




And there you have it! Food is ready. Serve it with a side dish of greens and enjoy.
