GINGER COOKIES

The holiday season is here! And with it comes indulgence. Family and friends gather around the dinner table and feast. I feel like I gain kgs in December, it's not even funny. All my health talk goes out the window and it is what it is.
A lot of holiday baking is also unleashed at this point. From cakes to cookies, we cover almost everything. One of my favourites to bake are cookies. They are just the perfect snack; little, sweet. They are great to have in the house in case a craving hits, or in case of people dropping in. Tea and cookies are a great combo.
Ginger cookies are a dream. The spice in the cookie just brings in a depth of warmth that lends itself to the coziness correlated with Christmas. I had so much fun making them as well as eating them.
You'll need:
200g flour
125 g sugar
1 tsp fresh ginger grated
1 tsp baking powder
1 egg
120g Softened margarine
1 tsp cinnamon
In a bowl, whisk together sugar, margarine and egg until fluffy

Add in the ginger

In a separate bowl, mix the flour, baking powder, cinnamon.

Add the mixture to the other wet one.

Use a spatula to fold in the flour mixture until you get a dough. Knead with your hand to ensure its firm.

Cover the dough in cling film and place in fridge to firm it up more ( this ensures the cookies hold a shape when baking)

After 30 minutes, take it out. Preheat the oven to 175c
Cut up the dough into medium sized balls. Use your hands to make the little balls. Place them in a baking tray with space in between. Use a fork to make fun shapes.

Bake for 20 minutes or until they start to brown on the ends.
And voila, your cookies are ready.
