BEET CARROT PASSION JUICE

Let’s face it, Mombasa doesn’t have seasons. It’s summer all day everyday where I’m from. This has been both a blessing and curse, but I love it here. I mean, we have an ocean to jump into when the sun fries us up, what more can we ask for? And my, does that sun shine. The heat that comes with this coastal town is undeniable. I think that’s one of the reasons we are considered slower by our fellow countrymen; but hey, you’d be slower if you lived here too!
Apart from hibernating in our houses forever, we have come up with ways to beat the heat. One of them is staying refreshed and hydrated. Our bodies are 70% water, so you get the essential part it plays in our bodies’ compositions. How to hydrate? Water, soda, tea (if you are one of those dawa ya moto ni moto people), and juice are some of the ways we cure our parched throats after hours in the sun.
Therefore I decided it was time for us to share one of our all time favorite juice recipes with y’all. I mean man can’t eat all the time, so we cater for drinks too. This beetroot carrot-passion juice ticks all the boxes;
sweet
refreshing
hydrating
healthy
Organic
Passion juice is very popular but can sometimes be too sour on its own (the evidence is in the heartburn) so adding some alkaline flavors balances it out. The beetroot lends its earthy flavor while the carrot add a little bit of sweet to the juice. If I haven’t sold you on this juice yet’ I’d have to add that carrots and beets are good for skin, hair and overall health. You’re welcome.
You’ll need;
3 beets
2 carrots
5 passion fruits
6 tbsp. sugar
1.5 litres water
Using a juicer, juice the carrots and beets.

In a blender, add in the passion fruit pulp, sugar, water and the beet- carrot juice. Blend until wholly incorporated.

Pass the juice through a sieve to ensure the juice is smooth. Store in your jars and cool in the fridge before serving.

And voila! Serve it in a wine glass and have a moment. You deserve it.
