Black eyed peas fritters (bhajia za kunde)

Quarantine season has been and is still upon us. And one thing I'm having a lot of is screen time. My Netflix subscription is renewed and you'll catch me binging on every reality show I can get my hands on. I have also renewed my snack eating subscription 😂😪. Issa problem. We all know these two go hand in hand. So in between movie breaks, I've been delving into making delicious snacks. You'll see a lot of them in the days to come. Today's snack is so delicious and satisfying and so easy to make. These tiny balls of heaven will gain you bragging rights without breaking too much of a sweat.


You'll need;

A blender

1 cup of black eyed peas (kunde)

1tsp salt

1tsp baking powder

1tsp grated ginger and garlic

1 bunch of dhania

Chilli and mixed herbs as preferred


Instructions

Soak the kunde overnight. This process is important as it softens them up.




Add all the ingredients in a blender and pulse. Add water gradually until you get a thick mixture. Test the consistency by spooning. If it holds shape on the spoon, it's good to go. If it's too runny, you can pass it through a sieve to drain excess liquid.



Heat oil in a deep frying pan. When brought to temperature, drop the mixture by spoon. They will form and hold round/oval shape. Don't overcrowd the pan. When they get to a brown color, remove from oil, drain excess oil.



And you're good to go! Goes so well with tamarind ( ukwaju) sauce or tomato sauce. It's a perfect snack because it can be eaten at anytime during the day or night.
