BUTTERNUT SQUASH SOUP

Hey Dada fam, today we are making soup. Soups are so good for the winter time, I mean I can only describe it as a hug in a bowl. It warms you from the inside, and forget being in love, this is a way better feeling. Lol.
Soups are well known as starters in restaurants and come in many different types. The common ones are mushroom, tomato, chicken. Instant soups can also be bought in packs in stores. I'm not a fan of the store bought ones, so I went on a mission to make my own batch. From scratch. And after a couple of experiments, I have favourites. This is one.
Our butternut squash soup brings is not only souper ( i had to!) duper delicious, its also super healthy. Its totally vegan and oil free. It is kid friendly so it can be had by the whole family. It doesn't take long to prepare, so its also time friendly. Now that I've eliminated most excuses as to why you wouldn't make this, here's the recipe.
Ingredients
1 butternut squash cut into chunks
4 carrots cut in chunks
4 medium sized potatoes halved
1 red onion cut in quarters
1 thumb of ginger
Rosemary sprigs
Pinch of salt
Dash of pepper ( optional)
1/2 tsp turmeric powder

In a sufuria, add all the ingredients and add enough water to cover the ingredients.
Let it simmer for 10 minutes. Use a knife to see if the potatoes and squash are cooked through

Put everything in a blender, blend until smooth

Add a little water and return on medium heat. Let it simmer then switch off.
Serve in your favourite soup bowl, garnish with some roasted squash seeds and enjoy hot.
