CHIPS MASALA

Something that I have learned in life is that deep-fried, foods are the equivalent of warm pajamas. I mean it feels like a hug to the heart, pun intended, with cholesterol and all. Too many hugs to the heart can be fatal, but a once in a while indulgence is essential for life. Now most of the time, we stop at fries. But what’s better than chips? Chips masala. Chips masala is basically chips/ fries cooked with spices. It's Indian inspired but I say, you can add whatever flavors you want in. here's how we make ours;

Ingredients

2 tbsp. vegetable oil

1 large onion chopped

1/4 tsp. rosemary

1/4 tsp. Cumin seeds

1 tsp. grated ginger and garlic

1 tsp. tomato paste

1/4 tsp. garam masala

2 tbsp. Tomato sauce

2 tbsp. dark soy sauce

2 tbsp. lemon juice

1/4 tsp. salt

Preparation

Heat the oil in a large pan over medium-high heat, then add the onion and fry until browned.



Add the rosemary, cumin seeds and coriander stems, garlic and ginger. Add the salt, tomato paste.






Add the garam masala, soy sauce, and tomato sauce. Stir, reduce the heat to medium.

Add in the fries and green bell peppers. Fold in for 2 minutes or until the sauce clings to the potatoes and they soften slightly.




Squeeze in the lemon juice, add coriander leaves for garnish. Toss well to coat. Serve immediately.
