HERES WHAT YOU DO WITH LEFTOVER RICE!

It’s a conundrum we’ve all faced at one point in life. Fridge clearing day. Where you make a mash-up of your leftovers. If you’re lucky, you get one bomb plate of food. If you’re not, and let’s be honest that’s 8 times out of 10, you get a weird greyish looking thing. But worry not, I TRIED IT SO YOU DON’T HAVE TO. Something that we tend to have leftovers of is rice. Reheating the same ol rice gets exhausting pretty quickly. So here’s a recipe for my pimped up rice. Goodbye bland rice, hello fancy schmancy Asian inspired stir-fried rice.
Things you’ll need;
Leftover rice
1 zucchini julienned
1 carrot julienned
3 pineapple slices diced
1 yellow bell pepper julienned
1 green bell pepper julienned
1 onion diced
1 tsp rosemary
4 tbsp dark soy sauce
1 tbsp white vinegar
3 tbsp cooking oil
A thumb of ginger grated
Chili powder (optional)
4 tbsp cooked minced meat (you can easily leave this out if you want a vegan dish)
Coriander stems and leaves for garnish
In a sufuria/pot/ wok heat oil. Add onions and let it brown. Add ginger and rosemary.
Add the carrots and zucchini strips, stir and let them sauté.
After a min or two, add in the meat and pineapple slices into the sufuria and saute. After 3 minutes, add in the rice, vinegar, of course, and soy sauce. Stir well to incorporate. The bell peppers are the next to go in. (I do this because I love my peppers to have a bit of a bite to them)
Keep stirring with your wooden spoon to avoid rice sticking and burning. Finish off with the coriander stems and leaves.
And your hug in a bowl is ready! There’s your easy pimped up delicious bowl of rice. Also, feel free to experiment. Add as many vegetables and meats as you want in your dish. I of course used what was in my fridge. Looking forward to seeing your bowls of #pimpeduprice
