PINACOLADA 'ICE CREAM'

I've always been an icecream fan. New flavors, I want them. Finding places that have curated different flavors, that's me! I mean what's not to love, it's cold, creamy and just hits different on a hot day. And trust me, where I stay, its always a hot day. So you can bet I have so many icecream containers that I now use to store leftovers in the fridge( it's the African way😂)
Ice cream making is an art that needs an ice cream maker( which I don't have) so I just stick to buying ice cream. So when I read about this 'ice cream' I was both intrigued and sceptical. Vegan ice cream or commonly known as nice cream is a healthier alternative for regular ice cream. Instead of condensed milk, milk, sugar, you use bananas as a base. I tried it, and I was pleasantly surprised.
Its pretty versatile, and you can build your own flavors. This week I decided to try pinacolada nice cream. The flavor reminds of the beach and vacations. Before you make it, there are a few pointers. Bananas have a pretty unique taste that tends to overpower other flavours, so make sure you the flavor you're going with is pretty pronounced. Also, be patients with your blender, it will take a few pulses and shakes to get the end result as its thick. We don't want it watery. Also, always use frozen bananas and whatever other fruit you want to add, like in my case, pineapples.
You'll need
A blender
Frozen bananas(3)
Frozen pineapple slices(5)
Vanilla essence
Coconut milk
In a blender, add, the coconut milk, frozen fruits and a drop of essence.
Blend on low. Pulse. Shake until it blends into a smooth paste.
Pour it out into a tub. Freeze from 2 hrs to overnight.
Using your ice cream scoop, scoop onto a bowl and enjoy.
