AVO TOAST

Its avocado season! At least in our house. We received a box of them from the village because us townfolk aren’t traveling back there as often as we would. Sigh. So it’s raining avocadoes and hence we have to get creative with how we use them. After topping every meal with avocado slices for a week, I decided to diversify. I mean, avocadoes are nothing if not diverse. So get ready. You’re about to see a lot of them on here.
Today, we are focusing on the humble avocado toast. Make no mistake though, it’s delicious as. We use wholemeal as our vessel (because we try to be healthy in these streets), then we add the delicious avocado, a fried egg, tomato slices, herbs, and spice, and we have a snack on our hands!
Avo toast is widely known as a breakfast choice, but it can easily be a snack between meals or a light meal. As usual, do you boo! Also don’t shy away with your toppings. You can add vegetables you like, nuts, herbs, grains, fruit. The egg is totally optional if you want to take the vegan route.
Here’s what you’ll need and how you make it;
INGREDIENTS
1 slice whole grain bread, toasted
1 small avocado
1 tbsp. cooking oil
1 large egg
Lemon zest
Salt and pepper to taste
1 tomato thinly sliced
INSTRUCTIONS
Mash the avocado in a small bowl and season with salt and lemon zest.
Heat a skillet over low heat, spray with oil and gently crack the egg into the skillet. Cover and cook to your liking.
Place mashed avocado over toast, top with egg, tomato slices, salt and pepper and hot sauce if desired!
